Vegan Gingerbread
2 cups Plain Flour
1 cup Sugar
2 level teaspoons Baking Soda
2 teaspoons Ginger
1 teaspoon Mixed Spice
2 tablespoons Golden Syrup
¾ cup Olive Oil
1 cup Tea (250mls) (not hot – warm ok)
Method
- Sift dry ingredients
- Make tea and melt Golden Syrup in it while hot, then allow tea to cool a little.
- Add Oil.
- Pour into dry ingredients and mix carefully.
- Grease a loaf tin. Line loaf tin with grease-proof paper.
- Bake in a moderate oven approx 40-50 mins.
- Don’t have oven too hot or top will burn.
- Pull out when 95% done and leave to rest with tea towel over the top. This will complete the remainder of the cooking.
Best consumed the next day.
